Chef Clinton Nuyda moved to the island of Kauai, Hawaii with over 25 years of culinary experience mostly, from the Greater Los Angeles Area. Clinton specializes in Asian, Italian, Mediterranean, and Spanish cuisine, and is known for his memorable steaks and flavorful sauces that suit any dish.

Born and raised in the Philippines, Clinton began his culinary journey at his grandmother’s side. His family (including his influential grandmother) eventually moved to California where Clinton’s fine dining career took off. He worked in the kitchens of Chef Makoto Tanaka’s, Mako restaurant in Beverly Hills, Chef Wolfgang Puck’s flagship Spago Beverly Hills, and Chef Suzanne Goin’s LA Tavern in Brentwood, among others. Clinton was handpicked by Chef Eric Klein for Maple Drive and later SW Steakhouse at the Wynn Hotel in Las Vegas. He moved back to the Philippines briefly where he was Head Chef at Grappa’s Ristorante in the busy Makati business district.

Upon returning to the United States, Clinton settled in Kaua’i where he impressed diners at Kauai Pasta Lihue, Eating House 1849 by Roy Yamaguchi (where he was listed by Hawaii Magazine among the top three chefs in the Best of Kauai 2019: Food and Drink: Chef category), The Cabana, and Lava Lava Beach Club, and The Tasting Room. He has also shared some of his cooking secrets during weekend cooking classes at Monkeypod Jam.

Clinton remains close to his Filipino roots and makes a killer Adobo and Sinigang with Salmon. When Clinton is not in the kitchen, he enjoys playing music and woodworking.
